Recipe: Falafel Spinach Wraps



This recipe is inspired by the Falafel Wrap from Uncle Faouzi's. They're my favorite fast food place when it comes to vegan options and I recommend everyone try that and their Special Vegetarian Wrap. I recently found out that I have a gluten intolerance and I wouldn't care but I can really see the difference in my skin when I stay away it. So I had to find an alternative to their wraps because I crave them all the time.

I've seen a couple of leaf wrap recipes online and thought why not try and make the wraps myself with spinach wraps. This recipe is good for anyone who is gluten free or on a low-carb diet. I've even heard that it's a good option when you're on The Whole 30 program.

It is amazing and dare I say even better than the original. Being healthy doesn't have to be depressing.

Ingredients
  • 10 Large spinach leaves
  • 30 Falafels
  • Hummus
  • 2 Tomatoes
  • 1 tsp Himalayan salt
  • 1 tsp Black pepper
  • Chili sauce (for dipping)
Instructions

1. Wash the leaves. Salt and then steam for 5 minutes, or quickly boil them. They shouldn't shrink too much nor become soggy.

2. One at a time, place a spinach leaf on your cutting board and carefully shave the thick middle stem. Just take off enough so that the stem feels flat, and try not to tear the leaf.

3. Place spinach leaves on a flat surface, spread some hummus near the top/middle of each leaf, fill each leaf with 3 falafels, and one slice of tomato, topped with salt and pepper to taste cut in half.

4.  Tuck in the sides of the leaf and roll it up. Put a bit of hummus on the end to help them stick together.

5. Serve with a side of  chili sauce for dipping and enjoy.
