Probiotic Fermented Pineapple Drink


This drink originates from Mexico, where its called Tepache, and is known for its many health benefits. I suffer from a ton of food allergies, which means I spend a lot of time researching ways to alleviate my symptoms (ciabatta bread is my weakness). I came across this, however, when i was looking for things to do with pineapple skin because I had a feeling I was throwing away many health benefits every time I cut up a pineapple. I had the best surprise when I found this recipe that, by luck, was good for gut health as well.

Fermented drinks are a great way to stay hydrated and they also carry their fair share of nutrients such as vitamins (including the ever important B12). They support your body's cellular activity and refresh your microbiome. They stimulate your immune system and also increases nutrient absorption because of the high concentration of fresh enzymes.

Pineapples themselves pack a punch when it comes to health benefits.It has anti-inflammatory properties and are good for your digestive health. They carry vitamin C to fight against oxidation, premature aging and prevent cardiovascular disease, while its manganese, copper and B vitamins trigger our natural detoxification processes and support energy production in our cells.

The added spices carry their own health benefits too. Ginger and cloves both contain enzymes that aid in gut health, is anti-inflammatory and high in many nutrients. Cinnamon also improves digestion while carrying other benefits such as being antibacterial, antifungal, and anti-inflammatory. Cinnamon is also an antioxidant and pack full of nutrients.

The benefits of these ingredients as well as better gut health leads to better skin, protection from seasonal colds and flu as well as preventing aging and many illnesses.

Recipe:

serves: 2 liters

Ingredients:
  • the rind of one large ripe pineapple
  • 1 cup sugar
  • 1 cinnamon stick
  • 1/4 teaspoon powdered cloves
  • 2 teaspoons grated ginger
  • 2 liters filtered water
Instructions: 
  1. Rinse and peel the pineapple.
  2. Add all the ingredients except the water to an airtight 2 liter container.
  3. Pour the water over top of the other ingredients and mix or shake till all sugar has dissolved.
  4. Put the container in a cool area away from direct sunlight for 3-4 days and allow it to ferment.
  5. Strain the mixture, put it in the fridge and enjoy it over ice.
