Cauliflower Hot Wings (Gluten Free)


The hardest thing on my plant based journey has by far been letting go of Chicken-Licken hot wings. I discovered them right before I started my journey and they immediately became my favorite comfort food so giving them up straight after was impossible. I know I am not the only one because someone has told me before that just like there are vegetarians with milk she wants to be a vegan with hot wings.

It took a long time but I have finally given them up. I weaned myself off from them by supplementing with these cauliflower "hot wings" that I  have with the Soulfire sauce. They are so so so good and one of my favorite plant based recipes. I have been wanting to share it for the longest time but I have been trying to perfect the recipe and I think I finally have.

Here it is, I hope you enjoy it as much as my family and I do.

Ingredients
"Wings"
  •  1  head of cauliflower
"Buttermilk" Mixture
  • 2 eggs worth of egg replacer
  • 1 cup plant based milk
  • 1 Tbsp apple cider vinegar
Flour
  • 2 cups of gluten free all-purpose flour
  • 2 tsp Himalayan sea salt 
  • 3 Tbps paprika 
  • 1 Tbsp finely chopped rosemary 
  • 1 Tbsp finely chopped thyme
  • 1 Tbsp chicken spice
  • 2 Tbsp chili flakes
  • Sesame oil for frying

Directions
1.       Cut cauliflower into bite size pieces.
2.       Heat oven to 220C and roast cauliflower for 20 minutes on each side.
3.       Make egg replacer and leave to set.
4.       Mix plant based milk and apple cider vinegar together and let it stand for 5 minutes to create buttermilk.
5.       Mix all the ingredients for the flour together in a big bowl.
6.       Heat oil in a large pot.
7.       Mix all ingredients for the buttermilk together and place all the roasted cauliflower in it. Stir and mix to cover all the pieces.
8.       One by one lift a piece of cauliflower, shake off as much of the buttermilk mix as possible and then dip each piece into the dry ingredients. Shake off the excess powder and drag the cauliflower through the buttermilk again. Now toss them in the flour again.
9.       Fry until golden.
10.   Once done frying place the cauliflower on a cooling rack to drip off excess oil and guarantee crispyness.
